Pomegranate Jasmine Iced Tea | Sweetened with Rock Sugar Syrup

Pomegranates are in season, and they make a striking iced tea.

This one pairs fresh pomegranate with delicate jasmine. The method is simple: steep, chill, press, shake. What comes out is a glass of clear, bright red tea that tastes of both the fruit and the flower.

The sugar

Rock Sugar Syrup (冰糖漿) is made from traditional Chinese rock sugar. It pours clear and tastes clean, with a light, rounded sweetness.

Granulated sugar is slow to dissolve in cold tea. A syrup goes straight in and blends with one shake. Rock sugar syrup is also gentle, so it softens the tartness of the pomegranate without covering the jasmine.

What makes it work

Steep the jasmine fully so the aroma comes out, then cool it fast over ice. Hot tea poured into the shaker would melt the ice and dilute the drink.

Take the pips out of the lemon slices. Pressed lemon pips turn the tea bitter. Press the lemon gently first to release its scent, then press the pomegranate seeds until the juice runs red.
