Coffee and orange sound like an odd pair until you taste them together.
This drink keeps them in layers. Fresh orange juice sits over ice, and a soft coffee cream floats on top, sweetened with our Rock Sugar Syrup. Each sip brings bright citrus up through smooth coffee.
The sugar
Rock Sugar Syrup (冰糖漿) is made from traditional Chinese rock sugar and comes ready to pour. Its sweetness is clean and light.
Granulated sugar struggles in cold cream. It takes time to dissolve and can leave grit behind. A syrup blends in at once. Rock sugar syrup is also gentle, so it rounds off the espresso without competing with the orange. Start with 10g and adjust to taste.
What makes it work
Whisk the cream only until it thickens slightly and still flows. Whipped too stiff, it will not pour into a smooth layer. Fill the glass with ice before the juice goes in, so the orange stays cold and fresh and the cream has something to rest on. Pour the coffee cream slowly over the back of a spoon so it spreads across the surface instead of sinking.
