Blood Moon Halloween Cocktail | Made with Rock Sugar Syrup

This is a Halloween party drink that changes colour in the glass. It starts jet black and finishes with a band of blood red.

Food-grade bamboo charcoal turns the shaken base black. Hibiscus tea poured in last brings the red.

The sugar

Rock Sugar Syrup (冰糖漿) is a clear golden syrup made from rock sugar, ready to pour.

Granulated sugar struggles to dissolve in a cold shaker. A syrup mixes in at once. Rock sugar syrup has a mild, clean sweetness that rounds off the liqueur and the tart lemon without masking the fruit.

What makes it work

Use only a little charcoal powder. A small amount is enough to turn the drink fully black.

Fill the serving glass with ice before you strain the drink in. Pour the hibiscus tea slowly at the end so it spreads through the top of the glass instead of mixing straight in.
