Three ingredients for an iced tea that actually tastes like summer

Green apple iced Longjing is the kind of cold drink that comes together in fifteen minutes and tastes like more work went into it. One green apple sliced with a pinch of salt to keep it bright. Four grams of Longjing brewed quickly in hot water then poured over ice to lock the colour. Two tablespoons of Ship Brand Rock Sugar Syrup to round the edges. Blend the apple with the cold tea, strain into a glass with fresh ice, and drink immediately.

The combination works because Longjing carries a chestnut-vegetal note that pairs cleanly with green apple. Rock sugar syrup gives clean sweetness without molasses, so the tea stays clear and the apple stays bright.

Recipe

Yield: 2 glasses
Time: 15 minutes

Ingredients

  • 1 green apple, cored and sliced thin
  • Pinch of salt (to brighten the apple)
  • 4 g Longjing tea leaves
  • 200 g hot water at 90 C
  • 1 to 2 tablespoons Ship Brand Rock Sugar Syrup
  • Ice, plenty

Method

  1. Slice the apple thin. Toss with a pinch of salt. Set aside.
  2. Steep the Longjing in 90 C water for 2 minutes. Pour over a glass of ice to flash-chill.
  3. Blend the apple slices with the cold tea on high for 20 seconds.
  4. Strain through a fine mesh into a glass full of fresh ice.
  5. Stir in 1 to 2 tablespoons rock sugar syrup. Taste, adjust, drink.
