Tangerine peel slab sugar water, warming and digestive
Tangerine peel slab sugar water is a Cantonese after-meal drink. A slice of aged tangerine peel, a piece of Ship Brand Golden Slab Sugar, a pot of water, simmered together until the kitchen smells of citrus and caramel.
The peel does the digestive work. The slab sugar carries it. White sugar would give sweetness without depth; Ship Brand slab sugar gives the kind of round caramel note that makes the peel sing.

Recipe
Serves: 2 small bowls. Total: 30 minutes.
Ingredients
- 1 wedge of aged tangerine peel, soaked 10 minutes in warm water
- 500 g water
- 30 g Ship Brand Golden Slab Sugar, broken into smaller pieces
Directions
- Soak peel in warm water 10 minutes. Scrape off white pith.
- Boil water, add peel and slab sugar.
- Low simmer 20 minutes until deep amber.
- Strain into bowls, sip warm.
