Spring red matcha cloud, a layered chilled dessert
This is a layered chilled spring dessert built on red bean and matcha. A red bean paste base sweetened with Ship Brand Rosé Brown Sugar. A clean matcha milk layer in the middle. A cloud of whipped matcha cream on top, dusted with more matcha powder. The colours stack pink, jade, and white.
The point is the sugar. Rosé brown sugar gives the red bean paste depth without going muddy. Plain white sugar makes red bean taste flat; this one keeps the bean flavour forward.

The build
Cook soaked red beans with rosé brown sugar to a thick paste. Spoon into the base of a small glass. Pour over warm matcha milk (matcha powder whisked into warm milk with a touch more rosé brown sugar) and chill until set. Whip cream with matcha powder to soft peaks. Pile on top, dust with matcha, serve cold.
