PUMPKIN ROCK SUGAR CUSTARD

Ingredients 

  • 1 small pumpkin 
  • 50g of YTS Crystal rock sugar 
  • 1 egg
  • 100ml of coconut milk 
  • A little bit of salt 

Decoration

  • 100g YTS white granulated sugar 
  • 50ml water 

Instructions 

    1. Prepare the Pumpkin:
      • Peel the pumpkin and remove its seeds.
      • Cut the pumpkin into small chunks.
    2. Steam the Pumpkin:
      • Add the pumpkin chunks to a steaming tray with 30g of rock sugar.
      • Steam over medium heat for 20 minutes until soft.
      • Mash the steamed pumpkin into a smooth puree.
    3. Mix the Custard Base:
      • In a bowl, combine the mashed pumpkin with 1 egg and 100ml of coconut milk.
      • Stir well until the mixture is smooth and uniform.
    4. Hollow Out the Pumpkin Shell:
      • Scoop out the remaining seeds from the pumpkin shell.
      • Brush the interior with olive oil and line it with foil.
      • Pour the pumpkin custard mixture into the hollowed-out pumpkin.
    5. Bake:
      • Preheat the oven to 170°C for the top and 180°C for the bottom.
      • Bake the pumpkin for 40 minutes.
    6. Decoration:
      • Add 100g white sugar and 50ml water together, bring it to boil to make sugar thread decoration

    7. Serve and Enjoy! :
      • Allow the custard to cool slightly before serving.
      • Pair it with your favorite tea for the ultimate experience.
