Celebrate the Lunar New Year with a dessert full of symbolism and sweetness: Step-by-Step Prosperity Cake (步步糕升). This traditional Chinese dessert combines the soft, chewy texture of glutinous rice with the rich flavour of red beans, making it a perfect choice for family gatherings. Each bite symbolizes progress and prosperity for the year ahead.

INGREDIENTS

  • Red beans : 200g
  • Glutinous rice flour : 100g
  • YTS Dark Slab sugar: 30g
  • Osmanthus flowers: Optional for garnish
  • Water: 100ml

 

INSTRUCTIONS

  1. Prepare the Red Beans:
    • Soak 200g red beans overnight.
    • Cook the soaked beans in water until soft. Drain and set aside.

  2. Make the Batter :
    • Mash the cooked red beans and mix with 100g glutinous rice flour.
    • Gradually add 100ml water and stir until smooth.

  3. Sweeten the Mixture:
    • Add 30g of YTS Dark Slab Sugar to the batter and mix well.
    • Tip: Yuen Tung Sugar’s fine granules dissolve quickly, ensuring even sweetness throughout the dessert.

  4. Steam the Cake:
    • Brush a container with oil to prevent sticking, then pour the batter in.
    • Steam over medium heat for 30 minutes until firm.

  5. Cut and Serve:
    • Let the cake cool, then unmold and cut into squares. Garnish with osmanthus flowers if desired.
