A two-layer iced tea for a humid afternoon
Jade jasmine iced tea is the drink for a long humid afternoon when nothing else will do. A jasmine tea jelly sits at the base, set with Ship Brand Rock Sugar and white jelly powder. A green grape lemon green tea pours over the top, layered cleanly without stirring.
The sugar is the point. Rock sugar gives the jelly the right snap, no muddy molasses note, just clean sweetness that lets the jasmine come through. The same rock sugar dissolved into the green tea base keeps the whole drink coherent.

Recipe
Serves: 1 tall glass
Total: 30 minutes plus chill time
Ingredients
- 800 g water for the jelly
- 50 g Ship Brand Crystal Rock Sugar
- 40 g white jelly powder (白凉粉)
- 1 tablespoon sugar-cured jasmine flowers
- 200 g water for the fruit syrup
- 100 g Ship Brand Crystal Rock Sugar
- Juice of half a lemon
- Green grapes, halved
- Cold-brewed green tea, to top
Directions
- Boil the 800 g water with 50 g rock sugar and 40 g jelly powder until fully dissolved.
- Cool to 40 degrees, pour into a flat tray, scatter jasmine flowers on top, chill until set.
- Boil 200 g water with 100 g rock sugar, cool, add lemon juice.
- Cube the set jasmine jelly. Press the grapes lightly to release juice.
- Spoon the jelly cubes into the base of a tall glass. Add ice.
- Pour the cold green tea over the back of a spoon so it layers cleanly above the jelly.
- Top with the lemon syrup and grape halves. Serve immediately.
