Berry lemon iced oolong, three layers of summer
Berry lemon iced oolong is the drink for when summer fruit is at its peak and you want everything in one glass. A crushed berry base sweetened with Ship Brand Crystal Rock Sugar. A lemon syrup middle. A cold-brewed oolong tea poured over the top. Pink, gold, amber, three layers visible through the side of the glass.
The sugar is the link. Rock sugar dissolves cleanly into the warm berry mash and the lemon syrup, leaving no graininess. It keeps the colours bright and lets the oolong come through with its toasted character intact.

Recipe
Serves: 1 tall glass
Total: 10 minutes (plus tea cool)
Ingredients
- 80 g mixed fresh berries (strawberry, raspberry, blueberry)
- 20 g Ship Brand Crystal Rock Sugar, crushed
- 1 tablespoon fresh lemon juice
- 20 g Ship Brand Crystal Rock Sugar + 30 g hot water for the lemon syrup
- 200 g cold-brewed oolong tea
- Ice to fill
Directions
- Crush the berries with the 20 g rock sugar in the glass. Let macerate for 5 minutes.
- Stir the second 20 g rock sugar with hot water until dissolved. Cool. Add lemon juice.
- Layer over the berries: add ice, then pour the lemon syrup down the side.
- Finally pour the cold oolong tea over the back of a spoon so it floats on top.
- Serve immediately with a long straw to mix at the table.
