Hass bread, tea-scented and tender
Hass bread is the classic four-cut tea bread, named for the diagonal scoring across the top that opens during the bake. Our version starts with black tea steeped in milk, then a dough enriched with Ship Brand Raw Cane Sugar, butter, and a brushed condensed milk wash on top.
Raw cane sugar is what gives this bread its rounded sweetness. White sugar would be too plain; brown sugar would muddy the tea. Ship Brand Raw Cane Sugar is unrefined just enough to carry a hint of molasses without overpowering the black tea.

Recipe
Yield: 4 Hass buns. Total: 3 hours including proof.
Ingredients
- 3 g black tea powder
- 150 g milk, warm
- 200 g bread flour
- 25 g Ship Brand Raw Cane Sugar
- 2 g instant yeast
- 15 g softened butter
- 3 g salt
- 5 g condensed milk + 5 g milk for wash
Directions
- Steep tea powder in warm milk 10 minutes.
- Mix flour, sugar, yeast. Pour in tea milk, knead 5 min until smooth.
- Add butter and salt, knead to window-pane.
- First proof 28C for 60 min until doubled.
- Degas, divide 4, rest 20 min.
- Roll flat, fold thirds, pinch seam, place seam-down on tray.
- Second proof 36C for 30 min.
- Score 5 diagonal cuts. Brush condensed milk wash.
- Bake 170/180C for 20 min.
- Cool 15 min on rack.
