Sugar Syrup, Block and Powder | How to Use Each in Summer

Sugar is not one thing. The same cane can arrive as a pourable syrup, a firm slab or a fine powder, and each form behaves differently the moment it hits the pot or the glass. In summer, when half of what you make is cold and quick, choosing the right form saves time and gives a better result.

Here is the short version of how we use each, and when.

Syrup: for cold drinks

Liquid syrup is smooth and ready to use, with nothing to dissolve. Pour it into iced drinks and chilled teas and a quick stir spreads the sweetness evenly, with no grit at the bottom of the glass. It is the fastest way to sweeten a cold cup.

Block: for hot drinks, soups and braises

Block sugar is firm and concentrated, and it dissolves slowly. That slow release is the point in a long simmer, where it builds a rounded sweetness into hot teas, tong sui and braised dishes. It is the sugar you drop into the pot and let time do the rest.
