INGREDIENTS 

  • Peach: 1
  • Oolong tea: 5g
  • Milk: 200ml
  • White chocolate: 50g
  • Gelatin sheets: 10 sheets
  • Whipping cream: 150g (50g for the mixture, 100g whipped)
  • YTS Rosé Brown Sugar: 15g

 

INSTRUCTIONS

  1. Prepare Peach Puree:
    • Peel and dice the peach.
    • Blend into a smooth puree and set aside.
  2. Make Oolong Milk Tea:
    • Heat 200ml milk with 5g oolong tea.
    • Steep for 20 minutes, then strain the tea leaves.
  3. Melt the Chocolate Mixture:
    • Chop 50g white chocolate into small pieces.
    • Add 50g whipping cream, 15g Rose Brown Sugar, and melt using a double boiler.
    • Soften 10 sheets of gelatin in cold water, then mix into the melted chocolate.
    • Combine the gelatin mixture with the oolong milk tea and stir well.
  4. Combine Peach Puree and Whipped Cream:
    • Fold the peach puree and 100g whipped cream into the milk tea mixture.
  5. Chill and Set:
    • Pour the mixture into a mold or container.
    • Refrigerate for at least 4 hours until set.
  6. Serve and Enjoy!:
    • Once chilled, cut into bricks and serve. Perfect for a refreshing and elegant dessert.
