  • 60g Sago pearls

  • 15g Raw Cane Sugar

  • 200g Milk

  • 150g Coconut milk

  • 15g Gelatin sheets (softened)

  • Fresh mango cubes or balls


👩‍🍳 How to Make It

1️⃣ Cook the sago: Boil water, add sago, and stir constantly to prevent sticking. Cook until the centers are nearly translucent (a tiny white dot remaining), then cover, turn off the heat, and let it sit to finish cooking.

2️⃣ Chill the sago: Rinse in cold water to remove excess starch and keep the texture bouncy.

3️⃣ Make the coconut base: In a small pot, heat milk with raw cane sugar until warm and fully dissolved. Add the softened gelatin and stir until melted.

4️⃣ Mix in coconut milk: Remove from heat and add the coconut milk. Stir until well combined.

5️⃣ Assemble: Fill serving cups about 60% full with the coconut mixture. Add 1 spoonful of sago and 1 spoonful of mango cubes into each cup. Lightly mix.

6️⃣ Chill & Decorate: Freeze for 40 minutes or chill until set. Unmold and decorate with extra mango balls, mint leaves, or edible flowers for a beautiful finish.
