There is an old Chinese parable about a guqin player named Bo Ya who broke his strings the day his closest listener died. The phrase 伯牙絕弦 has carried ever since: two things in such complete understanding that the rest of the world quiets down. We named this drink after it because, on a good day, that is what happens between jasmine green tea and cold milk. Nothing fights. They simply meet.

This is a two-layer iced drink. A clear, bright jasmine green tea at the bottom. A cool, whisked milk layer floating on top. A spoonful of Ship Brand Rock Sugar Syrup running through both layers. Fifteen minutes from start to first sip, and most of that is steeping.

Step-by-Step Instructions

1. Steep the Jasmine

Pour 80°C water over the loose jasmine leaves. The temperature matters more than people think. Hotter water draws out bitterness, while this temperature wakes the floral notes without scorching the leaf.

2. Wait Eight Minutes

Set a timer. The first three minutes are colour. The last five are flavour. Do not shorten this step.

3. Strain and Cool Fast

Pour the tea through a fine sieve into a clean jug. Drop a handful of ice into the hot tea and stir until melted. The fast cool locks in the jasmine aroma before it cooks off.

4. Whisk the Milk Layer

Fill a cocktail shaker or wide jar with ice. Add the cold milk, the cold cream, and a measure of Ship Brand Rock Sugar Syrup. Whisk or shake for 40 seconds. You are looking for a smooth pour that coats the back of a spoon.

5. Layer Tea and Milk

Fill a tall glass two-thirds with the cold tea. Pour the milk mixture slowly over the back of a spoon so it floats on top. The ratio is roughly two parts tea to one part milk.

6. Serve Immediately

Bring it to the table layered. Stir once before drinking to let the tea and milk meet.
