🌿 Cake Batter:
✔️ 2 Eggs (separated)
✔️ 30g Corn Oil
✔️ 39g Milk
✔️ 3g Lemon Juice
✔️ Black Sugar Syrup (to taste)
✔️ 45g Cake Flour
✔️ 9g Cocoa Powder

🍫 Lava Filling:
✔️ 35g Whipping Cream
✔️ Black Sugar Syrup
✔️ 20g Chocolate Ganache


👨‍🍳 How to Make Chocolate Lava Cake

1️⃣ Prepare the Batter:

  • Separate egg yolks and egg whites, keeping the egg whites chilled.
  • In a bowl, whisk together corn oil, milk, lemon juice, and black sugar syrup until well combined.
  • Sift in cake flour and cocoa powder, then mix in the egg yolks until smooth.

2️⃣ Whip the Egg Whites:

  • Beat egg whites with black sugar syrup and a little lemon juice until stiff peaks form.
  • Gently fold the egg whites into the batter to keep it light and airy.

3️⃣ Bake to Perfection:

  • Pour the batter into the mold, tap to release air bubbles.
  • Bake at 135°C for 30 minutes, then increase to 150°C for 5 minutes.
  • Allow the cake to cool completely before adding the filling.

4️⃣ Create the Lava Magic:

  • In a separate bowl, whip whipping cream, black sugar syrup, and chocolate ganache until thick and creamy.
