A bright drink for a hot afternoon

This is the drink we reach for in the middle of a long, sticky day. Ripe mango muddled in the glass. Jasmine green tea poured over. A spoon of Ship Brand Slab Sugar Syrup for the caramel depth that white sugar cannot give. A whipped, lightly salted cream cap floated on top. The whole thing takes less time than the kettle does.

The slab sugar syrup is the part that turns this from a fruit drink into something with shape. It is made the slow way from our traditional caramel slabs, then bottled at a strength that pours cleanly without crystallising in the bottle.

Why this sugar

Slab sugar syrup carries the molasses and slight bitterness of traditional cane slabs, dissolved into a ready-to-pour liquid. It mixes into cold drinks instantly, never grits, and gives milk tea, iced coffee, and fruit drinks a richer floor than plain syrup.

Recipe

Serves: 1 tall glass

Total: 5 minutes (plus tea cool)

Ingredients

  • 100 g ripe mango, peeled and cubed
  • 1 tablespoon Ship Brand Slab Sugar Syrup
  • 180 g jasmine green tea, cool
  • 1 teaspoon fresh lemon juice
  • Ice, to fill
  • 40 g lightly whipped cream with a pinch of fine salt

Directions

  1. Drop the mango cubes into the glass. Press lightly with a spoon to release juice.
  2. Pour the slab sugar syrup over the mango.
  3. Add the cooled jasmine tea and lemon juice. Fill the glass with ice.
  4. Cover and shake for 30 seconds in a cocktail shaker, or stir vigorously for one minute.
  5. Pour back into the glass. Spoon the salted cream over the top so it floats.
  6. Serve immediately with a wide straw.

Notes

  • A ripe yellow mango gives the brightest flavour; less ripe fruit needs a touch more syrup.
  • The cream cap is optional but worth it for the contrast against the lemon.
