Why You’ll Love These Rose Cookies

Ingredients:

For the Cookie Base:

  • 100g softened butter
  • 1.3g salt
  • 68g black sugar (Ship Brand recommended!)
  • 18g egg (added in 3 parts)
  • 100g cake flour
  • 20g bread flour
  • 24g cocoa powder

For the Rose Decoration:

  • 500g white bean paste
  • 15g lemon juice
  • 15g egg yolk
  • 15g softened butter
  • 30g almond flour
  • Matcha powder (for leaves)
  • Strawberry powder (for rose petals)

How to Make Rose Cookies:

  1. Prepare the Cookie Dough:

    • In a bowl, beat butter, salt, and black sugar until fluffy.
    • Add egg in three batches, whisking well each time.
    • Sift in cake flour, bread flour, and cocoa powder, and gently fold to combine.
    • Roll out the dough on parchment paper and chill in the fridge for 30 minutes.
    • Use a cookie cutter to shape the dough into circles, then bake at 170°C (top heat) / 150°C (bottom heat) for 10 minutes.

  2. Make the Rose Decoration:

    • In a bowl, mix white bean paste, lemon juice, egg yolk, and softened butter.
    • Add almond flour and stir until smooth.
    • Divide the mixture in half—one part stir in matcha powder (for leaves) and the other stir in strawberry powder (for rose petals).

  3. Assemble the Cookies:

    • Pipe the rose petals and leaves onto the baked cookies.
    • Bake again at 110°C for 30 minutes to set the decorations.
